Fromagerie Tyrode, located in L’Auberson in the canton of Vaud, is a small family-run cheese dairy, operated with great passion by Vincent and Bénédicte Tyrode, a cheesemaker couple from Franche-Comté. In 1997, Vincent Tyrode joined the cheese dairy as an employee, and 4 years later, in 2001, he had the opportunity to take over the business. Supported by Bénédicte, he decided to take the plunge. The L’Auberson milk cooperative trusted him and handed over the milk from local producers for the production of their cheese specialties. Since then, the couple has been committed to continuing the local cheese tradition and enriching it with a personal touch. The cheese dairy relies on short supply chains, strives to minimize its environmental impact, and actively contributes to the economic vitality of the region.
The spruce wood belt, secret to a unique taste. Vacherin Mont d’Or cheeses have the particularity of being encircled by a spruce wood band. These wooden belts, handcrafted from Jura spruce, transfer and combine their subtle aroma with the flavors of the cheese to create an absolutely unique taste.
Alpine milk from the Vaud Jura
The cows are fed with grasses and flowers from the Vaud Jura, which gives the milk used for the production of this cheese unique floral notes.
