Curd cheese is a pure natural product with valuable ingredients such as high-quality protein, vitamins (A and C) and minerals (calcium, magnesium and zinc). Curd cheese is a low-fat protein source that can be used in many ways in both savoury and sweet dishes.
Our Ländle curd cheese is produced using the traditional Schulenburg method. In this process, the milk is thickened using lactic acid cultures and natural rennet. The thickened jelly is then cut and pressed to gently separate the fresh cheese mass from the whey. This process requires 5 litres of milk to produce 1 kg of curd cheese. Modern, yield-optimised processes require 3.4 litres of milk per kg of curd cheese. The result is a completely different curd cheese consistency with different baking properties.

Vorarlberg Milch is a registered cooperative owned by around 500 Vorarlberg farmers.
Vorarlberg consists of 47% alpine pasture and small-scale agriculture. The average herd size is 17-19 cows. The farmers still know their cows by name.
The variety of herbs and grasses makes our milk unique. If you know the beauty of our "Ländle", it is quite natural that the best Alpine milk comes from here.
Only milk from Vorarlberg is processed into excellent dairy products and cheese specialities.
