The Quercy plateau offers ideal conditions for goat farming, as the vegetation gives the goat's milk characteristic aromas, which are reflected in the taste of the goat's cheese.
As well as the regional origin and the keeping of the goats, the know-how of cheesemaking plays an essential role, which is carried out via ultrafiltration in the case of Cabriol. These factors give the cheese its fresh taste and its even, very creamy texture with a delicate melt. The cheese factory has received great recognition for this cheese quality and its products enjoy a special reputation on an international level.

The French cheese factory was founded in 1998, the year, according to the manufacturer, in which Zinedine Zidane was named World Footballer of the Year. The home of the B?che de Ch?vre is the Département Lot-et-Garonne in south-western France, where the Lot, a tributary of the Garonne, and the Quercy plateau meet. Barely a year later, in 1999, the dairy received its first organic certificate. This is how the young cheese factory became a company that specialises in the production of French cheese from organic farming.

In addition to soft cheese specialities made from pasteurised cow's and sheep's milk, the cheese factory specialises in the production of exceptional soft goat's cheeses.
