The Green Mountain Plant-Based Steak (Pork Style)
… with mushroom sauce and rösti
Ingredients (2 servings)
2 pork steaks
100 g seasonal mushrooms
80 ml vegetable broth
80 ml vegetable cream
3 floury potatoes
3 spring onions
2 tbsp peanut oil
1 tbsp white wine vinegar
1 tbsp soy sauce
Salt and pepper
Nutmeg
Paprika powder
Instructions:
1. For the rösti, boil the potatoes in salted water with the skin on until almost tender. Clean the spring onions, cut off the roots and dry ends. Halve the onions, rinse them under cold running water and drain them well.
2. For the sauce, clean the mushrooms and slice or quarter them if necessary. Heat 2 tbsp of peanut oil in a sufficiently large pan and fry the mushrooms in it for 3-4 minutes. Deglaze with vinegar, soy sauce and broth, stir in paprika powder and bring to the boil. Let the stock simmer for about 5 minutes.
3. Add the cream or vegetable substitute and let the sauce simmer until it thickens slightly. Season with salt and pepper. If necessary, thicken the sauce with starch mixed with water. Keep the sauce warm.
4. Peel the still warm potatoes and grate them coarsely on a kitchen grater. Season the potato mixture with salt, pepper and freshly grated nutmeg.
5. Heat the peanut oil in a large pan and fry 4 röstis of approximately the same size in several batches. Fry the röstis for 3-4 minutes on each side until golden brown. Then keep them warm in the preheated oven.
6. Fry the TGM pork steaks in peanut oil in a coated pan over medium heat for about 5 minutes on each side. Then also keep them warm in the oven.
7. Fry the spring onions in the steak pan over medium heat for 3-4 minutes on all sides. Season with salt and pepper.
8. Arrange one steak each with the spring onions and two röstis on a plate and serve with some of the mushroom sauce.
