The Prinzregent Luitpold Bergkäse is the traditional hard cheese made from Allgäu raw milk. The heart of it! Here, the old cheesemaking craft is combined with maturation using red smear cultures on spruce boards in the in-house ripening cellars. This allows the mountain cheese to develop its full aromatic spice and acquire a firm yet delicately melting texture.

Our Allgäu mountain cheese is traditionally made from the best Allgäu pasture and hay milk g.t.S. and ripens for at least 8 months to develop its full, robust aroma. The edible red smear rind gives it a special note, while its fat content of at least 50% FDM ensures a creamy consistency.
