Mazzetti Balsamic Vinegar of Modena: Tino Tipico
This Aceto Balsamico di Modena I.G.P. is light and full-bodied with a sour aroma. It is an all-rounder and perfect for hearty winter salads, Caprese (tomato - mozzarella) and for refining soups and sauces.

Famous all over the world, the real Aceto Balsamico di Modena I.G.P. is a special delicacy that comes from the heart of Emilia Romagna and has become the most popular Italian vinegar worldwide. "Aceto" simply means "vinegar". It is made from fully ripe, sweet grapes of selected, local grape varieties. These are in turn processed into must - whereby a distinction is made between reduced (under vacuum) and boiled must, the higher quality must. The mixing ratio later determines the taste and quality. Fermentation is stimulated by the addition of wine vinegar and 10-year-old wine vinegar. The mixture is then stored in oak barrels for at least two months. The more mature qualities are stored for up to twelve years. Since 2009, it has been registered as I.G.P. (Indicazione geografica protetta = protected geographical indication) by the European Union (Reg. CE N. 583/2009) and is therefore the only one that can be called "Aceto Balsamico di Modena". This can be recognized by the corresponding blue/yellow logo.
