Botanical Sunset

A vibrant and refreshing mocktail with the strong, aromatic notes of shiso and lemon balm, combined with fresh citrus fruits and a light effervescence.

Ingredients:

• 5-6 shiso bicolor leaves
• 5-6 lemon balm leaves
• 1 tbsp fresh lime juice
• 1 tbsp fresh orange juice
• 1 tsp honey or agave syrup
• 1⁄2 cup sparkling water
• 1⁄2 cup cold jasmine green tea (or chamomile tea for a mild note)

Preparation:

• Lightly muddle shiso and lemon balm leaves with honey, lime, and orange juice in a shaker.
• Add cold jasmine tea and shake well with ice.
• Strain into a glass with ice.
• Top with sparkling water and stir gently.
• Garnish with a shiso leaf, a sprig of lemon balm, and an orange slice.
