Biomanufaktur Havelland Beef Shank Slice

Uckermärker Beef
Plenty of pasture – as much as they can graze
Oxen love meadows. And this grassland is always available to them at the organic farms. Good air, fresh green, and almost constantly on their feet. That's how nature intended it. And that's how fantastic taste is created.

Breed & Rearing
The white-brown Uckermärker cattle look most beautiful in the morning mist. However, the animals are not only in the meadows then, but usually day and night – regardless of the weather. This robust regional crossbreed of Simmental and Charolais cattle is kept extensively, meaning on large areas with low stocking density. Their diet: whatever grows in front of their noses. Only in winter do they receive additional hay and silage – as needed. Protective stables are naturally available, for example for calving. Finally, these calm, down-to-earth cattle are raised in suckler cow husbandry. Each farm forms its own continuous cycle of generations.
Meat
Due to constant outdoor access, the meat has beautiful marbling and little fat. The flavour carrier is well-distributed intramuscularly, creating fine marbling. Primarily heifers and oxen are sourced. The result: juicy, long-lasting beef flavour – earthy, fruity, full-bodied. Exactly what gourmets swear by. There is also hardly any cooking loss with such slowly grown fibres. Thanks to a minimum of one week of maturation, the meat becomes particularly tender and aromatic.
