Blue cheese made from cow's milk, produced in the French Auvergne region, with a thin rind. It matures for at least 28 days in maturing cellars. During maturation, the Fourme D'Ambert acquires a creamy consistency and develops a mild, pleasant, hearty and aromatic blue cheese flavour. The natural rind gives the cheese a rustic appearance with mushroom aromas.
