There are over 200 different varieties in total, but only a few are edible. It has been known for thousands of years and was considered a delicacy in ancient times. But white asparagus was only discovered by chance in the 19th century. Asparagus sprouts were covered to protect them from animals. Due to the resulting lack of light, the asparagus did not form chlorophyll and remained white. The much more delicate and finer-tasting white asparagus quickly found many fans, so that almost only white asparagus is grown in Germany.
