In 1942, the maternal grandfather, Giuseppe Cimino, began working as a cheesemaker. With his gnarled hands "mozzando" (cutting off) he crafted the first Mozzarellas and made them with one of the finest milks, from the buffaloes of the Piana del Sele.
Driven by the desire to learn the art of cheesemaking and to follow in his father-in-law's footsteps, Gennaro also began to dedicate himself to the family business as a young man and took it over in the 1980s in order to adapt it to the new market conditions.
