The handmade Baldauf Butterschmalz from hay milk is a very special specialty from Gebr. Baldauf.
For several hours, the good Allgäu butter from hay milk from the Hopfen dairy is cooked.
This evaporates the water content and the protein and lactose separate from the fat.
The result is a butterschmalz with a golden yellow color and a pure buttery taste.
In the Alpine regions, butterschmalz has long been known for its versatile use.
It is ideal for frying vegetables and meat, as it can be heated to a high temperature and gives the food a fine buttery note.
But it can also be used for baking and deep-frying.
