Description
Finely aromatic smoked pasta filata cheese made from cow's milk with a characteristic pear shape. The Scamorza gets its typical smoky aroma from being smoked with natural wood. This is perfectly balanced, not too strong, but still nicely spicy and delicately smoky. The golden yellow rind encloses a cheese dough with an elastically compact texture.

Recipe suggestion:
Scamorza tastes delicious on its own. Due to its firm consistency, it is also well suited for roasting.
Simply cut into 2 cm thick slices and brown briefly on both sides in a pan in olive oil (or clarified butter).
Fried aubergine slices go excellently with it.
On a plate with tomatoes and fresh basil leaves as well as capers and pine nuts, this becomes a delicious antipasti composition.
