Goes great as a (cold) side dish, especially with Asian and Indian dishes – e.g. with red lentil dal, with our ginger carrot, yoghurt raita, lime, coriander and a little sesame oil on top.
Recipe idea:
Beetroot with lentils, herb yoghurt and turmeric cauliflower
Ingredients
–
3 tbsp turmeric cauliflower
1 beetroot
2-3 stalks of thyme
3 tbsp olive oil
100g mountain lentils or beluga lentils
150g soya yoghurt or another alternative of your choice
¼ lemon
Handful of parsley
Handful of dill
2 stalks of mint
Salt, pepper

How to proceed

Peel the beetroot, cut into slices and place on a baking tray. Season with salt and pepper, add thyme and drizzle with 2 tbsp olive oil. Bake in the oven for about 40 minutes until soft.
Put the lentils in a pot with water and cook over medium heat for about 20 minutes. It is important to add salt only at the end, otherwise the cooking time will be significantly longer.
Put the yoghurt in a blender with the remaining olive oil. lemon juice, parsley, dill and mint and mix until fine. Season with salt and pepper.
To serve, first put the yoghurt on the plate and spread the lentils and beetroot on top. Finally, top with “the turmeric cauliflower”.
