The grapes of both varieties are harvested when fully ripe and gently fermented. Then 60% of the young wine matures for nine months in American oak barrels, while the remaining 40% is not aged in wooden barrels in order to bring out the juicy fruit aromas of the wine at the same time. The wine is only lightly filtered into the bottle and thus retains its full, original taste.
The Mapuche Indians call the Patagonian wild goose Kaiken, which crosses the Andes Mountains to Chile and Argentina. And because Montes also moved over the Andes to neighboring Argentina in 2001 to prepare his selected qualities there, he named them after the geese: Kaiken.
