Spicy note for desserts
Tonka beans have an intense scent of vanilla, woodruff and bitter almonds. Others recognize a hint of sandalwood, magnolia, clove and even pear in the beans. These complex aromatic properties have made the beans a popular addition to desserts, including ice cream and pastries, where they are grated and mixed into dry ingredients or stirred into cream, ice cream or alcohol. They also go well with chocolate and fruits such as strawberries or apricots.
The tonka bean resembles a large raisin and is finely grated before use, similar to nutmeg. Our tonka beans are organically grown.
Tonka beans impart flavors that are more subtle and complex than vanilla, and their essential oils have been used in perfumes for centuries. Tonka is particularly popular in French desserts and is often used in the creations of upscale Parisian patisseries. In the world of cocktails, tonka is an excellent addition to rum-based drinks. Tonka beans are the seeds of the flowering cumaru tree, which can reach a height of up to 25-30 meters. The cumaru tree is native to Central and South America.
