Käfer Aceto Balsamico di Modena IGP is made from Emilia-Romagna grapes and fine wine vinegar. The long aging in oak barrels creates a full flavor that combines sweetness and acidity. Since summer 2009, Aceto Balsamico di Modena has been a legally protected designation and there are strict government regulations for when a balsamic vinegar may be called that (the seal of authenticity is "I.G.P."), so that cultivation, production and aging processes are subject to strict controls. For our Käfer Aceto Balsamico di Modena I.G.P., grapes from Emilia-Romagna are pressed and gently boiled down. Wine vinegar, already aged in oak barrels, refines the thickened must and brings with it the first wood aromas. The still unripe balsamic vinegar is then placed in oak barrels and stored again until it develops its typical aromas.
