Gragger bread is flour, water, salt, time and a lot of manual work.
That's bread. Distinctive crust, coarse pores, juicy core. Gragger breads are handmade unique pieces made from flour, water, salt. Nothing else. All ingredients are of natural origin and are organically grown. No ready-made mixes, no baking agents, no artificial enzymes. Gragger works with natural sourdough. And what it needs is a lot of rest.
That's Gragger. "Bringing bread, the most traditional food of our culture, back to its origins" is the idea of Helmut Gragger. In 2012, Sarah Wiener brought the master baker from Linz to Berlin. Her wish to be able to eat bread again as she knew it from her childhood thus became a reality.
