Winemaking: The grapes are harvested when fully ripe and quickly pressed at a low temperature. The must is then settled for approximately 12 hours at a low temperature with SO2 and inoculated with yeast.
The wine is fermented at a low temperature (15-17°C) for a week, then cooled and clarified and stored under protective gas at a low temperature.
Soil: A combination of sandy, clay-limestone and slate soils.
