Herrmannsdorfer Landwerkstätten – Where organic, handmade food is created!

We have been butchers for 5 generations since 1898 and on our organic farm near Munich, we bring together everything that the food industry has divided, from field to plate. Arable farming, animal breeding and fattening - the traditional processing in our workshops and sales.
Behind this Herrmannsdorfer association is a comprehensive mission statement of mindful interaction with all life and necessities: the soil, water, air and plants, animals and people.

Traditional craftsmanship is revived during processing and combined with gentle, modern technology. This creates handmade food whose exquisite organic quality you can smell, taste and feel.
Herrmannsdorf is the centre of a network of over 100 organic farmers and producers in the region, with Herrmannsdorfer focusing on processing in our warm meat butcher's shop, the sourdough bakery and our delicatessen, as well as marketing the food.
As a small, self-contained unit, we produce in the region and for the region.
Our Herrmannsdorfer pigs are a cross between Duroc or Swabian-Hällisch country pigs. The beef comes from Angus, old Bavarian Fleckvieh or Limousin. Plenty of fresh air, exercise, natural feed and plenty of time to grow ensure particularly tasty and wonderfully marbled meat.
In our core business, the Herrmannsdorfer butcher's shop, we produce over 150 sausage and ham specialities with our own spice blends. We work here according to the principle of the warm meat method. This means that, as in the past with home slaughtering, we process the still warm meat immediately after stress-free slaughtering within approx. 4 hours in order to be able to produce sausage without using citrate or phosphate. This old process gives the sausage its very special taste.

The delicatessen and our butcher's shop in Kerschlach also produce classic meat and pasta dishes, sauces and broths in jars as well as fine raw and delicatessen salads. In order to preserve as many valuable vitamins and minerals as possible and the good, intensive flavour, our dishes in jars are gently pasteurised and not sterilised.
In order to get to know and experience the Herrmannsdorfer workshops better, we regularly organise large farm festivals, guided tours and courses in our workshop.
