MOILLARD GRIVOT SIGNATURE
Designation: AOP Bourgogne Pinot Noir
Grape variety: 100% Pinot Noir
Growing area: The grapes come exclusively from the best plots in the heart of the Côte-d'Or, one of the most prestigious wine regions in Burgundy, renowned for its exceptional Pinot Noir wines. This area offers ideal conditions for growing this grape variety, including perfect exposure and microclimate.
Vinification: In the traditional winemaking process, the grapes are cooled in stainless steel tanks for 5 to 7 days after a rigorous sorting. This allows for a gentle extraction of the aromas. Fermentation then takes place in thermoregulated tanks, which ensure precise temperature control. The wine is then transferred to 228-liter barrels, with 40% of the barrels being new and the remaining 1 to 4 times used. Aging takes place over a period of 12 to 15 months in these barrels, during which the natural malolactic fermentation also takes place. This fermentation contributes to the complexity and smoothness of the wine.
Soil type: The soils consist of a mixture of limestone, clay and marl, which creates ideal conditions for growing Pinot Noir. These soil types promote the minerality and freshness that are characteristic of Côte-d'Or wines.
