Instead of the typical honey and caramel notes, the green rooibos develops fresh and tart aromas reminiscent of apricot and lime blossom. For rooibos fans who want to try something new. Rooibos grows in the northwestern part of the Cape Floral Region of South Africa, especially in the picturesque Cederberg region. The Cape Floral Region is characterized by one of the world's greatest plant diversity. Many species, such as rooibos, are only found there. The rooibos plants thrive there thanks to the Mediterranean climate and the mineral-rich soils, without any additional irrigation or fertilizer. To preserve the fresh aromas and the green color of the aromatic rooibos needles, the oxidation process is stopped shortly after harvesting by gentle heating. This gentle process is similar to the production of green tea.
