From Falstaff to Feinschmecker: The multi-award-winning Backhaus Schröer in Mainz Kastel has been one of the most popular and best artisan bakeries in the Rhine-Main region for years. Hans-Herrmann, Kai and Tim Schröer now run their family bakery in the second and third generation. What began in 1951 as a single bakery is today a bakery that operates over 50 specialist shops throughout the Rhine-Main region.
One thing has not changed for the family since 1951: The passion and craftsmanship with which they bake their rolls, breads and pastries fresh every day. For this, they mainly use regional raw materials from suppliers they have known and trusted for decades. Well over 90 percent of their grain is grown within a 100km radius of the bakery. At Schröer, there are no ready-made baking mixes. No artificial dough acidifiers. No preservatives. Only the best flour, natural sea salt, their own sourdoughs, high-quality seeds and good butter.
