Here, cheese lovers will find everything their heart desires: Whether it's fantastic sheep or goat cheese, various semi-hard and hard cheeses, or the finest blue cheeses - all varieties are handmade and naturally matured.

 

The Philosophy of Tölzer Kasladen

Cheese is a “living substance” because it changes during its maturation process - this is how the operators of Tölzer Kasladen describe their valued dairy product. Handling cheese is of great importance to them: being curious, experimenting, acquiring knowledge and gaining experience - and: being mindful. All senses are stimulated - and you can tell by the quality!

The Story

The Tölzer Kasladen began its operation in 1972 with exclusively handcrafted cheeses that undergo the final step of their maturation process in the ripening rooms. Each of these cheeses has been free from chemical additives or genetic modifications for more than 45 years. The excellent milk that serves as the basis comes from a strictly regulated agriculture with high quality standards regarding animal husbandry and feeding. Nowadays, the Tölzer Kasladen has nearly 200 different types of cheese from 10 European countries in its assortment.

From Cheese to Art

In the diverse range from Tölzer Kasladen, you can find the sustainably flavorful, spicy, hand-scooped Camembert ‘Normandie’, which was even awarded the Médaille d'Or at the Concours Général Agricole in Paris in 2012. 

The historic ‘Valençay’ not only looks interesting but also tastes reminiscent of hazelnuts with a slightly earthy aftertaste. The Hochalm mountain cheese made from hay milk tastes strong and fruity with alpine herbs. Together with the Brie de Maux and the Pecorino Gran Riserva, these varieties are among the absolute Knuspr favorites!
