As early as the mid-17th century, this tuber, then known as "Kartüffel", was known in this country and was considered an important staple food. Visually, Jerusalem artichoke is very similar to the ginger tuber, but in terms of taste, it has an aroma that is more reminiscent of potatoes and artichokes. It has a white to light yellow flesh, which, when cooked, produces a sweet, nutty flavor. When processing, the irregular skin is either peeled or, as with potatoes, first cooked and then peeled. Jerusalem artichoke can then be used in a wide variety of ways! As a soup, in a stew or casserole, as a puree or even fried as chips, every cook will find a use for this exciting tuber!
