Drying takes place slowly and gently at low temperatures (approx. 12 hours for long pasta and approx. 8 hours for short pasta) in order to preserve all the nutrients and flavors of the wheat in the pasta. All Girolomoni® pasta is produced in our own fully organic pasta factory.

With bronze pasta, the pasta is pressed through a bronze mold. In this traditional bronze process, the pasta dough is pressed through a special bronze mold. The bronze makes the surface of the pasta rougher than with conventional molding, which means that the pasta can absorb the sauce better.

As a pioneer of organic farming in Italy, Girolomoni is today an agricultural cooperative with 300 members and its own fully organic pasta factory, where first-class organic grain is processed into pasta every day.
