The Green Mountain Plant-Based Steak
… with oyster mushroom ragout & chard dumplings

Ingredients (4 servings)
4 «The Green Mountain» steaks
500g fresh oyster mushrooms
1 white onion, finely chopped
1/2 clove of garlic, finely chopped
50g white wine
1 tbsp chopped parsley
500g cream or vegan cream
A little mustard

Salt, black pepper from the mill
Possibly some binding agent such as cornstarch or potato starch

500g fresh oyster mushrooms

Ingredients
400g bread cubes
1 egg
100ml milk
1 small white onion
1/2 clove of garlic, finely chopped
1 small cube of butter
3-4 chard leaves, cut into strips
Salt, pepper from the mill
Possibly some additional flour to bind the dumplings

Instructions:
1.Clean the oyster mushrooms and sauté briefly in a pan with the onion and garlic. Deglaze with white wine and pour in the cream.
2. Add mustard and let the mushroom pan simmer a little. If necessary, add some binding agent to the ragout. Season and add parsley.
3 Mix the bread cubes and egg very well, set aside.
4.Sauté the chard with onion, butter and garlic in a pan. Pour in the milk and bring to a boil briefly. Empty into the bread cubes and mix carefully.
5.Press the mixture down a little and let it stand covered for 30 minutes. Now mix carefully again and cook a test dumpling of 6–7 cm diameter for about 8–9 minutes. If the dumpling becomes too soft, mix a little more flour into the mixture.
6.To serve: Fry the steak according to the instructions on the package. Arrange the mushroom ragout next to or on the side of the steak. Place one or two dumplings on each side. Sprinkle with parsley.

Tip: To make the mushroom ragout airier, fold a little whipped cream into the ragout.
