Originally, Chaource cheese was made exclusively from raw cow's milk. Its production was a labor-intensive process, in which the curd was ladled into molds by hand and then matured in the monastery cellars. During the ripening process, the cheese developed its characteristic flowery rind and creamy texture.
In the 19th century, Chaource cheese production spread beyond the monasteries, with local farmers and cheesemakers adopting the traditional production methods. Chaource cheese became popular throughout France and eventually internationally, becoming a fixture in cheese shops and gourmet markets.

Today, Chaource cheese is produced by both artisanal producers and larger dairies, using pasteurized milk. It has a soft, creamy texture and a mild, slightly tangy flavor with hints of mushroom and earthiness.
