Thuringian Salami

The **Thuringian Salami** is a traditional sausage specialty from the Thuringia region in Germany. It belongs to the raw sausage varieties, which means that it is made from raw meat and matures over a certain period of time. Typically, Thuringian Salami consists of a mixture of pork and beef, with pork being the main ingredient. The meat is coarsely ground (minced), refined with spices such as pepper, garlic, allspice, caraway and often a pinch of nutmeg. The mixture is then filled into natural casings and hung to dry and mature.

The maturation of Thuringian Salami can take several weeks to months, depending on the size and type of sausage. During this time, the sausage loses moisture, which leads to an intensive development of flavor. The humidity and temperature play an important role in achieving the desired consistency and the typical, strong taste.

A special feature of Thuringian Salami is its production according to old, traditional methods, often in small butcher shops that rely on regional ingredients. Thuringian sausage specialties, including Salami, also enjoy a high reputation outside the region for their quality and unique taste. 

Not to be confused with Thuringian Salami is the also very well-known Thuringian Rostbratwurst, a fresh scalded sausage that is prepared on the grill. However, both products represent the rich sausage tradition of the region.
