Dice the onions and sauté them in a large pot until golden yellow. Break up the minced meat, add it, and brown it until golden brown, stirring regularly.
Wash the bell peppers and cut them into cubes. Then add the bell pepper cubes to the minced meat. Add tomato paste and roast it lightly. Afterwards, add the tomatoes, crushed garlic, as well as sugar, salt, pepper, paprika, Tabasco, chili, or cayenne pepper and season to taste. It's better to season a bit more cautiously at first and re-season after cooking if necessary. Now add the broth and let it simmer for 30 to 45 minutes over medium heat. If the liquid boils down, keep adding broth.
Shortly before the end of the cooking time, add beans and corn and cook for a few more minutes. Then taste everything again and re-season if necessary.
Chef's tip
Chili con Carne tastes best when it has had time to steep. Ideally, this dish should therefore be prepared the day before.
