The apple variety Elstar was bred in 1955 at the Dutch Institute for Horticultural Plant Breeding in Wageningen from the varieties Golden Delicious and Ingrid Marie.
The medium-sized fruits are yellow in colour with an intense red blush, their white-yellow flesh is crisp and juicy. Its strong, aromatic and slightly tart flavour is particularly evident when eaten fresh. However, it is also very well suited for strudels, applesauce, juice and drying.
