Ingredients

  • 200 g Broccoli
  • 250 g Sweet potatoes
  • 3 pcs. Eggs
  • 100 ml Cooking cream
  • 1 clove Garlic
  • 1 pinch Salt
  • 1 pinch black pepper

Preparation

    Preheat the oven to 180 °C top/bottom heat.

    Fill a large pot about halfway with water and bring to a boil.

    Meanwhile, peel the sweet potatoes and cut them into slices about 0.5 cm thick. Wash the broccoli and divide it into small florets.

    Add both vegetables to the boiling water and pre-cook for about 2 minutes over medium heat. Then drain.

    Layer the pre-cooked broccoli and sweet potato slices evenly in a small baking dish (approx. 20 cm x 30 cm).

    Whisk the eggs with the cooking cream and pressed garlic. Pour the mixture evenly over the vegetables in the dish.

    Season everything with salt and pepper. Place the dish in the oven and bake for about 15–20 minutes at 170–180 °C until the egg mixture has set.
