Ingredients
- 200 g Broccoli
- 250 g Sweet potatoes
- 3 pcs. Eggs
- 100 ml Cooking cream
- 1 clove Garlic
- 1 pinch Salt
- 1 pinch black pepper
Preparation
- 1Preheat the oven to 180 °C top/bottom heat.
- 2Fill a large pot about halfway with water and bring to a boil.
- 3Meanwhile, peel the sweet potatoes and cut them into slices about 0.5 cm thick. Wash the broccoli and divide it into small florets.
- 4Add both vegetables to the boiling water and pre-cook for about 2 minutes over medium heat. Then drain.
- 5Layer the pre-cooked broccoli and sweet potato slices evenly in a small baking dish (approx. 20 cm x 30 cm).
- 6Whisk the eggs with the cooking cream and pressed garlic. Pour the mixture evenly over the vegetables in the dish.
- 7Season everything with salt and pepper. Place the dish in the oven and bake for about 15–20 minutes at 170–180 °C until the egg mixture has set.
