Preparation method

First, prepare the vegetable mixture. Place all ingredients except the olive oil into a food processor or electric chopper and grind finely.

Next, heat 2 tablespoons of olive oil in a pan over medium heat. Form flat patties in the shape of schnitzels from the vegetable mixture with your hands.

Fry the schnitzels in the hot pan over medium heat for about 2-3 minutes on each side until golden brown. Arrange on plates and serve.

Chef's tip

Serve the vegetable schnitzels with a dollop of sour cream and fresh chives for an extra fresh aroma.
