Ingredients

  • 300 g sweet potato
  • 100 g dark chocolate 70%
  • 60 g liquid honey
  • 50 g virgin coconut oil
  • 3 eggs size M
  • 25 g unsweetened baking cocoa
  • 80 g spelt wholemeal flour type 630
  • 1 tsp organic baking powder

    First, prepare the sweet potatoes: Peel the potatoes and cut them into cubes of about 2 cm. Place the cubes in a pot, cover them with enough water, and bring everything to a boil. Once the water boils, reduce the heat to medium and let the sweet potatoes simmer for about 15–17 minutes until they are soft.

    While the potatoes are cooking, roughly chop the dark chocolate into pieces.

    Once the sweet potatoes are soft, drain the water and mash the potatoes with a fork until smooth. Now preheat the oven to 180 °C and line a baking dish (approx. 15 cm x 20 cm) with baking paper.

    Combine the sweet potato puree with the honey, liquid coconut oil, and eggs in a medium bowl and mix everything well. Then sift in the cocoa powder, spelt flour, and baking powder and mix everything into a smooth batter. Finally, fold in the chopped chocolate. Pour the batter into the prepared pan and bake the brownies at 170–180 °C for about 24–26 minutes.

    After baking, let the brownies cool in the pan for at least 30 minutes. Then cut the cake into 12 equal portions and serve. Enjoy your meal!
