  • 200 grams Flour Type 550
  • 4 pieces Braeburn Apples
  • 20 grams Cornstarch
  • 100 grams Sugar
  • 150 grams Unsalted Butter
  • 20 grams Lemon
  • 1/2 tsp Baking Powder
  • 3 tbsp Powdered Sugar
  • 1 pinch Ground Cinnamon
  • 1 Egg Yolk

Preparation

    Mix flour with cornstarch, baking powder, and cinnamon evenly.

    Beat egg yolk with sugar until frothy, then add lemon zest and butter in small pieces and beat until frothy as well.

    Add the flour mixture and stir briefly. Then form the dough into coarse crumbles with your hands and chill everything.

    Preheat oven to 175 °C convection. Peel apples and cut into thin slices.

    Now press half of the dough into an even cake base in a greased and floured springform pan (24 cm diameter) and then top with the apple slices. Distribute the remaining crumbles over this. Bake in the preheated oven for approx. 40 minutes at 175 °C convection until golden brown. Finally, sprinkle powdered sugar over the apple cake and serve.
Tip
As an extra flavor highlight, you can refine the crumbles with vanilla sugar, raisins, or cranberries, for example.
