Main Ingredients

  • 240 g whole wheat pasta
  • 400 g chicken breast fillet
  • 1 small white onion (finely diced)
  • 1 garlic clove (pressed)
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes (400 g)
  • 150 g mozzarella (grated or sliced)

Pantry & Herbs

  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 2 tbsp fresh chives (chopped)
  • Salt
  • Pepper

Preparation & Searing

    Cook the whole wheat pasta in salted water according to package instructions until al dente. Meanwhile, season the chicken breast fillets with salt and pepper on both sides.

    Heat the olive oil in a pan and sear the whole chicken breast fillets until golden brown on both sides (approx. 3 minutes on one side and 4 minutes on the other). Remove the fillets from the pan and set aside.

Prepare Sauce & Gratinate

    Reduce the heat and sauté the finely diced onion and pressed garlic in the remaining frying fat for approx. 2 minutes until translucent. Then slightly increase the heat again, add the tomato paste, and briefly roast it.

    Stir in the chopped tomatoes, dried basil, and chives. Let the sauce simmer over medium heat for approx. 5 minutes. If the sauce becomes too thick, add a splash of water or pasta water.

    Return the seared chicken breast fillets to the pan, cover with the tomato sauce, and spread the mozzarella on top. Cover the pan with a lid and let it melt over medium heat for approx. 3–4 minutes until the chicken is cooked through. Serve with the whole wheat pasta.
