  • 4 tortillas
  • 150 grams grated Emmentaler
  • 1 avocado
  • 8 eggs
  • 1 shallot
  • 100 grams fresh leaf spinach
  • Alternatively: vegan grated cheese substitute
 

Preparation

    Heat oil in a pan. Then whisk the eggs with a little salt and pepper, add them to the pan, and fry them into scrambled eggs. Slice the avocado, peel the shallots, and cut them into small pieces.

    Place the tortilla on a cutting board. Use a knife to make a cut from the center of the tortilla down to the edge.

    Quarter the tortilla. Fill each quarter with a different ingredient: Place sliced avocado, scrambled eggs, and a handful of chopped shallots on the tortilla quarters. Then add the cheese and finally drape a handful of baby spinach.

    Now fry the wrapped tortilla on both sides in a pan or on the grill.
