Ingredients
- 4 tortillas
- 150 grams grated Emmentaler
- 1 avocado
- 8 eggs
- 1 shallot
- 100 grams fresh leaf spinach
- Alternatively: vegan grated cheese substitute
Preparation
- 1Heat oil in a pan. Then whisk the eggs with a little salt and pepper, add them to the pan, and fry them into scrambled eggs. Slice the avocado, peel the shallots, and cut them into small pieces.
- 2Place the tortilla on a cutting board. Use a knife to make a cut from the center of the tortilla down to the edge.
- 3Quarter the tortilla. Fill each quarter with a different ingredient: Place sliced avocado, scrambled eggs, and a handful of chopped shallots on the tortilla quarters. Then add the cheese and finally drape a handful of baby spinach.
