SanLucar lets the tomatoes ripen sufficiently. The tomato fields are not harvested daily, but every three days, so that all trusses and loose tomatoes remain on the plant until their optimum time. The Caprese tomato is rather spicy/juicy in taste and is ideal as a salad tomato.
