Skinless and boneless mackerel fillets from sustainable and controlled coastal fishing in the Northeast Atlantic (FAO area 27.VIII.c: Bay of Biscay) caught off the northern coast of Spain. Filleted by hand and refined with a homemade, spicy tomato sauce, extra virgin olive oil from the first cold pressing, onions, garlic and paprika, all from controlled organic farming.

The mackerels are caught individually using lines to which several hooks are attached. The line fishermen lower the fishing lines directly over the shoal of mackerel. This prevents unwanted fish species or even birds or mammals from being caught. This mackerel fishing method may have the lowest catch, but it ensures the best fish quality.

„Pan do Mar“ (Bread of the Sea) shows an alternative on how to use marine resources not only respectfully and sustainably, but also to produce first-class products using traditional methods. The high-quality canned fish, such as the hand-caught tuna, from sustainable fishing are caught by small-scale fishermen using traditional methods and refined with ingredients from organic farming. The exceptional products are refined in the factory according to original Galician recipes, filleted by hand and filled into cans or high-quality glassware.
