Sheep and vast pastures. They belong together. As part of essential ecological cycles. Plenty of movement and a variety of herbs give the animals strength. Subtle in taste. Naturally tender to the bite.

Breed & Rearing

A flat, unprotected land needs small, strong animals. For this, indigenous breeds like Texel or Schwarzkopf were crossed with short-legged English rams. Almost always, they stand amidst the green, eating herb tips, maintaining and fertilizing the traditional cultural landscape.

Spacious sheepfolds complement this program: however, only weakened animals that need care come here. And, of course, ewes – once a year for winter lambing. Their manure is also spread on the meadows to promote plant growth. From spring onwards, they roam the vast land again with their lambs. An ecological cycle modeled on ancient times.
