Description
Chanterelles are easily recognizable by their egg yolk or pale yellow, upward-curving caps. The underside of the cap runs down the stem and is characterized by gills. The flesh is white and tastes very aromatic.
Origin
Chanterelles are found in our deciduous and coniferous forests, mainly under pines; mainly from June to October. It must still be sought by professional collectors. In addition to the low and fluctuating self-harvest, there are also annually fluctuating imports, especially from Poland, Romania, Lithuania, Latvia, Serbia. Other imports come from France and Spain.
Tips
Mushrooms should be consumed as soon as possible. Please do not wash (only brush off), as the mushroom will otherwise soak up water and become very spongy and lose its flavor.
Preparation
Cooked and stewed, chanterelles, like all mushrooms, are excellent for mushroom ragout and fillings. They are strong flavor carriers when preparing sauces.
