Ingredients

  • 50 grams dried figs
  • 100 grams ground hazelnuts
  • 100 grams ground almonds
  • 75 milliliters maple syrup
  • 25 milliliters cooking oil
  • 1 tsp gingerbread spice
  • 1 ½ tsp orange peel
  • 75 g chocolate sweetened with coconut blossom sugar
  • 1 tsp coconut oil (optional)
  • 2 tbsp blanched almonds
  • 1 tbsp apple sauce

Preparation

    Soak dried figs in lukewarm water for about 20 minutes. Mix ground hazelnuts, ground almonds, maple syrup, apple sauce, gingerbread spice, orange peel, oil, and salt in a bowl. Pat the soaked figs dry and cut them into small cubes. Add the cubes to the dough.

    Mix the dough well with your hands and let it rest for 5 minutes. Line a baking sheet with parchment paper and preheat the oven to 175 degrees Celsius top and bottom heat. Form 1 tablespoon of the dough mixture into a ball, then shape it into a Lebkuchen dough piece on the baking sheet. For this, hands should be cleaned regularly so that as little dough as possible sticks to the palms. The dough yields approx. 9 medium-sized Lebkuchen.

    If necessary, smooth the surface of the dough pieces with wet fingers at the end. Bake the dough pieces in the hot oven (middle rack) for 15 minutes. Remove from the oven and let cool completely. Melt chocolate in a double boiler. If the chocolate is too thick, simply stir in a little coconut oil during the melting process.

    Individually coat the cooled Lebkuchen with chocolate and garnish with blanched almonds. Let cool again and either serve immediately or wrap individually and give as gifts. Bon Epi-tit!
