Ingredients
- 800 g floury potatoes
- 400 ml vegetable broth + 1 tsp powder
- 60 g flour
- 1 tsp sweet paprika
- 60 g ground hazelnuts (alternatively almonds)
- 60 g breadcrumbs
- 1 pinch salt
- Black pepper
- Approx. 50 ml plant-based drink
- 1 pinch nutmeg
- 6 tbsp frying oil
- 1 large kohlrabi
Preparation: 35 min.
- 1Peel the kohlrabi and cut into 1 cm thick slices. Parboil them in boiling water for approx. 6 min.
- 2Meanwhile, peel the potatoes and cut them into rough pieces. Bring to a boil in vegetable broth in a covered pot, then cook covered over low heat for approx. 12 min., then drain.
- 3Meanwhile, in a deep plate, mix 100 ml water, flour, and sweet paprika and stir well. On a flat plate, mix hazelnuts and breadcrumbs. If a baby/toddler is eating along: coat the kohlrabi slices for the baby in the flour mixture, then in the nut-breadcrumb coating. Season the flour mixture generously with salt and pepper. Then coat the schnitzels for the adults. Fry all schnitzels over medium heat in two large pans with 3 tbsp frying oil each. Cook for approx. 3–4 min. per side.
- 4Meanwhile, mash the potatoes with a potato masher. Gradually add plant-based drink and stir until smooth. If necessary, remove some firmer puree for the baby. Season the rest with vegetable broth powder, salt, and nutmeg.
- 5Serve the mashed potatoes with the schnitzels. Lingonberries are a good accompaniment.
- 6Tip: The schnitzels work just as well with celeriac (autumn and winter) and with a swede. This way, you can always buy the vegetables that are currently cheaper or on offer due to the season.
