Fluffy to the Max: Why Protein Pancakes Are Revolutionising Breakfast

Classic pancakes taste wonderful, but due to wheat flour and plenty of sugar, they often lead to a rapid spike in blood sugar followed by an afternoon slump. Modern protein pancakes, on the other hand, rely on clever nutrient combinations: Complex carbohydrates from ground oats meet high-quality protein from quark and targeted sports nutrition.

The result is a delightfully fluffy stack of pancakes that tastes like a sweet dessert, yet reliably keeps you full for hours and optimally supports your muscle recovery.

Long-Lasting Fullness

Dietary fibre from whole-grain oats and slow-digesting casein protein prevent mid-morning cravings.

Muscle Protection & Power

Over 35 grams of protein per serving supply your body with all essential amino acids after your morning workout.

No Sugar Crash

The natural sweetness from bananas or Bourbon vanilla provides full flavour with no refined household sugar.

The Power Basic Recipe: Quark, Oat Flakes & the Perfect Consistency

The secret to foolproof protein pancakes lies in the right moisture ratio. Low-fat quark or creamy skyr give the batter juiciness and prevent the protein powder from drying out the pancakes. If you like, you can also get inspired by our fluffy oat-banana pancakes.

1

Grind flakes & mix

Briefly process the oat flakes in a blender into a fine flour. Then mix thoroughly with protein powder, baking powder, cinnamon, and a pinch of salt in a bowl.

2

Whisk wet ingredients

Whisk low-fat quark, eggs, and the oat drink together until smooth. Quickly fold in the dry flour mixture until a thick, smooth batter forms.

3

Fry until golden brown

Heat a little coconut oil in a non-stick pan over medium heat. Add 2 tablespoons of batter per pancake and cook for 2 to 3 minutes until bubbles form on the surface. Flip and cook for another 2 minutes on the other side.

The 4 Knuspr tips for maximum fluffiness without sugar

Protein batters behave differently during cooking than classic cake batters. With these four simple tricks, your breakfast is guaranteed to turn out as fluffy as in your favourite café.

Cooking protein pancakes in the pan over gentle heat

1. Whipped egg whites for the soufflé effect

Separate the eggs and beat the egg whites until stiff beforehand. When you gently fold the whipped egg whites into the batter right at the end, the pancakes will rise twice as high.

2. Let the batter rest for 5 minutes

Oats and protein powder need a few minutes to absorb moisture optimally. After a short resting period, the batter retains its shape when portioned.

3. Use medium heat with a lid

Heat that is too high burns the outside while the centre remains wet. Cook at a moderate temperature and cover with a pan lid so that the steam cooks the pancake.

4. Use Kitchin organic coconut oil

Pure coconut oil can be heated to high temperatures, does not burn in the pan, and gives the pancakes a subtle, nutty aroma without any artificial flavours.

Delicious Upgrades: Healthy Toppings with a Twist

A stack of pancakes is only complete with the right toppings. Choose natural ingredients to harmoniously round off nutritional value and taste:

  • Crunchy nut butter drizzles: Yutto Organic Crunchy Peanut Butter delivers healthy fats and an inimitable crunch.
  • Fruity berry power: Freeze-dried raspberries and blueberries from Seeberger provide intense fruit acidity and antioxidants.
  • Creamy protein frosting: Mix two tablespoons of skyr with a teaspoon of vanilla protein powder into a delicious cream.
