With Dulcey, Valrhona invents the fourth chocolate color: Blond. During a pastry demonstration, Frédéric Bau left white
chocolate in a bain-marie for a little too long. The result of this oversight surprised him: The chocolate had turned blond and smelled delicately of roasted shortbread and caramelized milk. Dulcey was created in 2012 and is an ode to the creativity and audacity that revolutionize the world of patisserie. The name Dulcey evokes the smoothness that characterizes this chocolate.
It all started with a happy accident – then eight years of research and development were needed to develop the recipe that we know today.
