Flammlachs is a delicious way to prepare salmon, where the fish is grilled over an open flame or open fire. This method gives the salmon a unique smoky aroma and a tender, juicy texture.

USAGE

For Flammlachs, fresh, high-quality fish is always used. It is cut into thin slices or fillets, depending on preference. Then it is "rubbed" with the spice mixture, which simply means "to rub in". This serves to preserve the fish and at the same time give it flavour. For this, the fish is left in the refrigerator for several hours to several days to mature and develop the desired taste and consistency. The sugar contained in it softens the saltiness and helps to caramelise. The open fire creates a crispy crust and the spices are lightly roasted. The fish thus acquires a unique aroma and a wonderful consistency! Suitable for e.g. salmon, trout, pike-perch, or cod. Can also be used with olive oil as a vegetable rub. Flammlachs is a popular appetizer or side dish in Scandinavian cuisines and is often served at Smörgåsbord buffets. The slight spiciness and the strong aromas of allspice and cubeb pepper, which are further roasted over the fire, complement the sweet-caramel note of the cane sugar and orange.
