INGREDIENTS FOR TABBOULEH WITH VIOLIFE GREEK WHITE (4 servings)

● 1 pack of Violife Greek White, diced ● 1 cucumber, diced ● 1 cup bulgur ● 200g tomatoes, cored and diced ● 2 large spring onions, chopped ● 2 tbsp fresh mint, chopped ● 60ml olive oil ● 60ml fresh lemon juice
● 1 handful of chopped fresh parsley ● 1 handful of chopped coriander ● Salt & pepper to taste

PREPARATION
Whisk together the oil and lemon juice in a small bowl and set aside.
Place the bulgur in a large bowl. Stir in 1 cup of boiling water. Leave to swell for 15 minutes until the bulgur is soft and has absorbed the water. Stir in the tomatoes, cucumbers, parsley, coriander, spring onions and mint. Add the olive oil and stir in. Season with salt and pepper to taste.

Leave to stand for at least 30 minutes to allow the flavours to blend. Garnish with diced Violife Greek White and parsley.
