Prosociano is the perfect alternative to Italian hard cheese – you can plane it, grate it and sprinkle it over your favourite dishes. Prosociano convinces with a slightly crumbly consistency (ideal for grating) and a very tangy flavour.
The plant-based cheese alternative is free from milk, soy, gluten, lactose, nuts and preservatives.

Violife Gran Prosociano goes perfectly with all pasta and risotto dishes, but also for hearty gratinating casseroles.

It also tastes great cold and can be used wonderfully for an Italian antipasti platter or grated over a salad.

INGREDIENTS FOR WILD ROCKET SALAD WITH VIOLIFE GRAN PROSOCIANO

FOR THE SALAD: ● 50g Violife Gran Prosociano (planed) ● 2 bunches of wild rocket (washed, dried and torn)
● 4 sun-dried tomatoes ● mix of pumpkin seeds, raisins, cranberries

FOR THE VINAIGRETTE: ● 1/2 cup olive oil ● 1/4 cup balsamic vinegar ● 1 teaspoon honey ● 1 teaspoon mustard
● salt and pepper, freshly ground

PREPARATION
For the vinaigrette: Combine olive oil, balsamic vinegar, honey, mustard, salt and black pepper in a jar with a lid.
Put on the lid and shake vigorously until everything is well mixed.

In a large bowl, combine the wild rocket, sun-dried tomatoes, pumpkin seeds, raisins and cranberries with the shavings of Violife Gran Prosociano. Pour the vinaigrette over it just before serving to keep the salad fresh.
