Ingredients

  • 1 onion
  • 400g vegan Spätzle
  • 120g vegan grated cheese
  • 0.5 tsp garlic powder
  • 200g smoked tofu
  • 2 tbsp sweet mustard
  • 2 tbsp vegan yogurt alternative
  • 2 tbsp vegan mayonnaise
  • 100g mixed salad
  • half a cucumber
  • half a bunch of radishes
  • 30g sunflower seeds
  • 1 tbsp mustard
  • 1 tbsp agave syrup
  • Juice of half a lemon
  • 4 tbsp olive oil
  • Salt
  • Pepper

Preparation

    Cut the onion into fine slices and mix with the vegan Spätzle and plant-based grated cheese. Season with garlic powder, salt, and pepper. Form a Rösti from one eighth of the mixture each and place it in the coated pan. Fry on both sides without oil for about 5 minutes over medium heat until the Rösti are crispy.

    Cut the smoked tofu into small cubes and fry until crispy in a separate pan with a little vegetable oil.

    For the dip: mix sweet mustard, vegan yogurt, and vegan mayonnaise and season with salt and pepper.

    For the salad: wash and chop the mixed salad, cucumber, and radishes. Mix all salad ingredients in a bowl.

    For the salad dressing: mix grainy mustard, vegan honey, lemon juice, and olive oil and pour the dressing over the salad. Top with sunflower seeds.

    Serve the Rösti with the salad, smoked tofu cubes, and dip. Enjoy your meal!
