Preparation method

Clean and slice the mushrooms. Sauté them in a hot wok or large pan with a little vegetable oil until golden brown.

Meanwhile, cook the Udon noodles according to package instructions (approx. 3 minutes) in boiling water, drain, and rinse with cold water. Pro tip: Use plenty of water to prevent the noodles from sticking.

Finely chop the garlic and ginger. Add them along with the sugar and 2 tbsp soy sauce to the mushrooms. Cut the spring onions into coarse pieces, add them, and stir-fry everything for another minute.

Chef's tip

For an extra crispy touch, you can sprinkle some toasted sesame seeds over the noodles at the end.
